Description

Adapted from: Heidi at FoodieCrush

Ingredients

Scale
  • 4 sweet potatoes
  • 2 thick cut slices of bacon
  • 3 Tablespoons melted butter
  • 4 Tablespoons Half & Half
  • 1 Tablespoon Swerve brown sugar
  • 1 egg
  • 1 teaspoon orange zest
  • 2 Tablespoons maple syrup
  • 1 cup white cheddar cheese
  • 1/2 teaspoon Himalayan pink salt

Instructions

  1. Bake sweet potatoes on a parchment lined baking sheet @ 400 degrees for approximately 40-60 minutes, depending on size.
  2. Cook the bacon 3/4 of the way done, then add 1 Tablespoon of Swerve brown sugar and cook until it dissolves & bacon is crispy.
  3. When the sweet potatoes are done, cut them in half and scoop out the cooked middle into a large bowl – leaving a boat.
  4. To the bowl add the melted butter, Half & Half, egg, orange zest, maple syrup, and salt.
  5. Mix until it is smooth.
  6. Add the cheese and bacon into the mixture.
  7. Stir until well mixed.
  8. Place the mixture into a gallon sized bag and cut off a corner, about 1/4″.
  9. Pipe into the skins.
  10. Bake at 375 degrees for 20 minutes.
