Makes 1 bowl, 1 serving

Macro bowls are an excellent way to pack nutrients and energy into your day. The Tex-Mex Macro Bowl is very simple and filling. The flavors complement each other like a taco salad. Add hot sauce, lime drizzle, or a tahini or cashew cream over the top for added flavor. Make it up ahead of time and store in fridge for up to a week.

Ingredients

Scale
  • 2 Cups Spinach (or Kale)
  • ¼ Cup Zucchini Noodles (homemade or store bought)
  • ½ Cup cherry tomatoes, halved
  • ¼ Cup black beans (rinsed)
  • ½ Cup Quinoa (cooked according to package)
  • ¼ Cup yellow corn
  • Cilantro leaves (optional)
  • 3 Tablespoons Guacamole (homemade or store bought)
  • 2 Tablespoons sugar free salsa
  • Sprinkle of hot sauce (optional)
  • Squeeze of lime (optional)

Instructions

  1. Layer in a medium to large size bowl: the spinach, zucchini noodles, cherry tomatoes, black beans, quinoa, and corn.
  2. Add the guacamole and salsa to the center of bowl.
  3. Sprinkle cilantro and squeeze lime all over.
  4. Sprinkle with hot sauce if desired.
  5. Enjoy!
