Tex-Mex Macro Bowl

Macro bowls are an excellent way to pack nutrients and energy into your day. The Tex-Mex Macro Bowl is very simple and filling. The flavors complement each other like a taco salad. Add hot sauce, lime drizzle, or a tahini or cashew cream over the top for added flavor. Make it up ahead of time and store in fridge for up to a week.
Ingredients
Scale
- 2 Cups Spinach (or Kale)
- ¼ Cup Zucchini Noodles (homemade or store bought)
- ½ Cup cherry tomatoes, halved
- ¼ Cup black beans (rinsed)
- ½ Cup Quinoa (cooked according to package)
- ¼ Cup yellow corn
- Cilantro leaves (optional)
- 3 Tablespoons Guacamole (homemade or store bought)
- 2 Tablespoons sugar free salsa
- Sprinkle of hot sauce (optional)
- Squeeze of lime (optional)
Instructions
- Layer in a medium to large size bowl: the spinach, zucchini noodles, cherry tomatoes, black beans, quinoa, and corn.
- Add the guacamole and salsa to the center of bowl.
- Sprinkle cilantro and squeeze lime all over.
- Sprinkle with hot sauce if desired.
- Enjoy!
