Tex-Mex Chicken Quinoa

  • 2 Cups cooked chicken
  • 2 Cups cooked quinoa
  • 2 Teaspoons ground cumin
  • 1 Teaspoon chili powder
  • Salt and freshly ground black pepper
  • 4 Teaspoons olive oil
  • 1 Cup diced red onion
  • 1 Cup black beans
  • 1/2 Cup fresh salsa

Suggested toppings: fresh salsa, diced avocado, chopped fresh cilantro, freshly squeezed lime juice


  1. In a pan, combine the oil and red onion.
  2. Saute until tender.
  3. Add the chicken, quinoa, beans, salsa, cumin, chili powder and salt and pepper to taste mix well and cook until done.
  4. Serve with toppings of your choice.
