Tex-Mex Chicken Quinoa
Ingredients
Scale
- 2 Cups cooked chicken
- 2 Cups cooked quinoa
- 2 Teaspoons ground cumin
- 1 Teaspoon chili powder
- Salt and freshly ground black pepper
- 4 Teaspoons olive oil
- 1 Cup diced red onion
- 1 Cup black beans
- 1/2 Cup fresh salsa
Suggested toppings: fresh salsa, diced avocado, chopped fresh cilantro, freshly squeezed lime juice
Instructions
- In a pan, combine the oil and red onion.
- Saute until tender.
- Add the chicken, quinoa, beans, salsa, cumin, chili powder and salt and pepper to taste mix well and cook until done.
- Serve with toppings of your choice.
