Spicy Shrimp and Vegetable Skewers

Spicy Turmeric Marinade

  • 3 tbsp. olive oil or avocado oil
  • 1 tbsp. fresh lime juice
  • 2 cloves garlic, finely minced
  • 1 tsp chili powder
  • 1 tsp turmeric
  • ½ tsp ground cumin
  • ½ tsp salt

Shrimp and Veggie Skewers

  • 1 lb Large Wild-Caught Shrimp, fresh, peeled and deveined
  • 2 Cups Red Onion cubes, 1″ pieces
  • 12 Small Zucchini, slice into ¼″ circles
  • 12 Small Yellow Squash, slice into ¼″ circles
  • 1 Red Bell Pepper cut into small cubes
  • 2 Cups Mushrooms
  • ¼ Tsp freshly Ground Black Pepper
  • ¼ Tsp Red Pepper Flakes, or to taste

Instructions

  1. In a small bowl, whisk together all the marinade ingredients.
  2. In a re-sealable bag, combine the shrimp and veggies with the marinade. Toss together gently until evenly coated. Cover and marinate in the refrigerator for 15 minutes.
  3. Preheat the grill over medium heat. While the grill heats up, thread the shrimp and veggies. Should make around 10 – 12 skewers
  4. Place the skewers onto the grill and grill 3-5 minutes per side until the shrimp is pink and cooked through.
