Shredded Cabbage Slaw

Ingredients

Scale
  • 1/4 Small red cabbage, thinly shredded
  • 1/2 Small green cabbage, thinly shredded
  • 1 Carrot, shredded
  • 1/4 Cup finely chopped onion
  • 1/4 Cup raisins
  • 1/2Cup raw cashews
  • 1 Teaspoon celery seed
  • 1/2 Cup unflavored soy, hemp, or almond milk
  • 2 Cloves garlic
  • 2 Tablespoons apple cider vinegar
  • 2 Tablespoons lemon juice
  • 1 Teaspoon Dijon mustard

Instructions

In a large bowl, mix together red and green cabbage, carrot, onion, and raisins. Blend remaining ingredients in a high-powered blender. Toss cabbage mixture with desired amount of dressing.
