Shredded Cabbage Slaw
Ingredients
Scale
- 1/4 Small red cabbage, thinly shredded
- 1/2 Small green cabbage, thinly shredded
- 1 Carrot, shredded
- 1/4 Cup finely chopped onion
- 1/4 Cup raisins
- 1/2Cup raw cashews
- 1 Teaspoon celery seed
- 1/2 Cup unflavored soy, hemp, or almond milk
- 2 Cloves garlic
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons lemon juice
- 1 Teaspoon Dijon mustard
Instructions
In a large bowl, mix together red and green cabbage, carrot, onion, and raisins. Blend remaining ingredients in a high-powered blender. Toss cabbage mixture with desired amount of dressing.
