Roasted Free Range Chicken
- Thawed & room temperature chicken dry with a paper towel.
- Spray with olive oil and sprinkle with spices of your choice.
- I like to place in an enameled cast iron roaster, cover and roast low and slow for 2-4 hrs. depending on size until internal temperature reaches 160°.
- Allow to rest.
