Roasted Free Range Chicken

  1. Thawed & room temperature chicken dry with a paper towel.
  2. Spray with olive oil and sprinkle with spices of your choice.
  3. I like to place in an enameled cast iron roaster, cover and roast low and slow for 2-4 hrs. depending on size until internal temperature reaches 160°.
  4. Allow to rest.
