Roasted Carrots & Beets

  • 3 small carrots
  • 1 beet
  • Himalayan pink sea salt
  • Black pepper
  • Italian seasoning
  • Extra virgin olive oil


Wash vegetables and cut into similar size pieces. Place in a bowl, drizzle with oil (so they glisten, but are not soaked) and season to taste. Preheat oven to 420 degrees, line baking sheet with parchment paper and roast for 20-30 minutes.
