Garlic-Herb Chicken Breasts
Ingredients

- 1/3 cup Avocado oil, divided
- 1 lb. Brussels sprouts, trimmed and halved
- 1/2 lb. Carrots or sweet potatoes, peeled and cut into 2-inch pieces
- Pinch of Pink Himalayan salt and pepper
- 4 lbs. Chicken breasts
- 3 Cloves garlic, minced
- 2 Tablespoons chopped fresh parsley
- 1 Tablespoon chopped fresh sage
- 1 1/2 Teaspoons Pink Himalayan salt
Instructions
- Preheat the oven to 375 degrees.
- Toss the vegetables with 2 tablespoons of avocado oil and sprinkle with a pinch of salt and pepper.
- Spread the vegetables on a rimmed baking sheet.
- In a small bowl, combine the remaining avocado oil, garlic, parsley, sage and salt. Rub the mixture all over the chicken.
- Place the chicken on top of the vegetables and roast for 40 minutes, until the juices run clear.
