Garlic-Herb Chicken Breasts

Ingredients

Scale
  • 1/3 cup Avocado oil, divided
  • 1 lb. Brussels sprouts, trimmed and halved
  • 1/2 lb. Carrots or sweet potatoes, peeled and cut into 2-inch pieces
  • Pinch of Pink Himalayan salt and pepper
  • 4 lbs. Chicken breasts
  • 3 Cloves garlic, minced
  • 2 Tablespoons chopped fresh parsley
  • 1 Tablespoon chopped fresh sage
  • 1 1/2 Teaspoons Pink Himalayan salt

Instructions

  1. Preheat the oven to 375 degrees.
  2. Toss the vegetables with 2 tablespoons of avocado oil and sprinkle with a pinch of salt and pepper.
  3. Spread the vegetables on a rimmed baking sheet.
  4. In a small bowl, combine the remaining avocado oil, garlic, parsley, sage and salt. Rub the mixture all over the chicken.
  5. Place the chicken on top of the vegetables and roast for 40 minutes, until the juices run clear.
