Cranberry Relish Salad

Ingredients

Scale
  • 2 (0.7 oz.) Simply Delish Jel Dessert from Thrive Market
  • 2/3 c. Cold water
  • 2 1/3 c. Boiling water
  • 1/2 c. Switch sugar replacement from Thrive Market
  • 1 (12 oz.) pkg. Fresh or thawed frozen cranberries
  • 3 Oranges, peeled and sectioned
  • 3 Honey Crisp apples, peeled and quartered
  • 10 Ounces canned crushed pineapple in natural juice, undrained

Instructions

  1. Dissolve gel packets in cold water.
  2. Add boiling water and Switch sugar. Stir until dissolved, set aside to thicken slightly.
  3. Process cranberries in food processor until coarsely chopped.
  4. Place in 10-12 c. bowl.
  5. Process apples and oranges in food processor until coarsely chopped.
  6. Add to cranberrys. Stir in pineapple. Stir in gel mixture. Chill until firm.
  7. This recipe has a nice crisp texture and a slightly tart flavor, very refreshing.
