Chickpea Greek Salad

Adapted from Ambitious Kitchen


  • 1 Can of Chickpeas, rinsed and drained
  • 1 Red, 1 Yellow and 1 Orange Bell Pepper, chopped
  • 1/4 Cup diced Red Onion
  • 1-Pint Grape Tomatoes, halved
  • 1/3 Cup pitted Kalamata Olives
  • 1 Medium Cucumber, sliced and quartered
  • 4 Ounces Feta Cheese, crumbled
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons freshly squeezed Lemon Juice
  • 1 Cloves Garlic, minced
  • 1 Teaspoon Dried Oregano
  • Freshly ground Salt and Pepper, to taste


  1. Whisk together
  2. Place all salad ingredients into a large bowl and toss to combine.
