Broccoli Cashew Fettuccine Alfredo

Ingredients

Scale
  • 1 box Chickpea Linguine Noodles
  • 2 Cups Broccoli Florets

Cashew Alfredo Sauce:

  • 1 1/2 Cups raw Unsalted Cashews, soaked overnight or boiled for 30 minutes
  • 1 cup + 3 Tbsp plain, un-sweetened Almond milk
  • 2 Tbsp Nutritional Yeast
  • 2 Tbsp Chopped Basil
  • 1 Tbsp Chopped Italian Parsley
  • 3 Tsp Herbs De Provence
  • 1/4 Tsp Garlic Powder
  • 3/4 Tsp Salt
  • 1/4 Tsp Black Pepper
Add all ingredients into a blender and blend for 1-2 minutes, until smooth and creamy.

Instructions

  1. Cook the pasta according to package directions.
  2. When pasta is 3 minutes from being done, add the broccoli florets.
  3. Drain pasta and broccoli and add Alfredo sauce.
  4. Stir until combined.
