Berry Crunch

Ingredients

Scale
  • 2 c. Blueberries
  • 2 c. Blackberries
  • 1 c. Cold water
  • 2 c. Cassava flour from Thrive Market
  • 1/3 c. Switch sugar replacement from Thrive Market
  • 1 tsp Pure vanilla extract

Topping:

  • 1 cup pecans, rough chop by hand or in food processor
  • 2 T unsalted grass-fed butter, melted
  • 1 1/2 T Switch sugar replacement from Thrive Market
  • 1/4 tsp Himalayan pink salt

Instructions

  1. Rinse and drain the berries and place in a 3-quart saucepan.
  2. Combine the last four ingredients and pour over berries.
  3. Bring to a boil, then reduce to simmer.
  4. Stir occasionally and gently. Cook until thickens and no longer cloudy.

Topping:

  1. Melt butter, add Switch and salt.
  2. Stir in pecans. Toast under broiler at 400° for seven minutes. Check frequently so they do not burn.
  3. Sprinkle on top of berries just before serving.
  4. Dessert can be enjoyed warm or cold.

Yields:

  • Berries: eight 1/2 c. servings 25.25 cal per serving.
  • Pecan topping: 2 T = 123 cal.
