Apple Radish Slaw

Ingredients

Scale

Slaw:

  • 1 Honeycrisp apple
  • 4 Watermelon radishes
  • 2 Tablespoons red onion, finely chopped
  • 4 cups green cabbage
  • 1 cup red cabbage

Dressing:

  • 1/8 Teaspoon powdered mustard
  • 1/8 Teaspoon celery seed
  • 1/4 Cup Swerve sugar replacement
  • 1/4 Cup Apple Cider Vinegar
  • 1 1/2 Tablespoons extra virgin olive oil
  • 1 1/2 Tablespoons water

Instructions

  1. Cut apple and radishes into bite size pieces and put into a large bowl.
  2. Finely chop the red onion and add to the bowl.
  3. Shred the cabbage in a food processor and add to the same bowl.
  4. In a small mason jar, combine dressing ingredients and shake until well-blended.
  5. Pour dressing over salad and toss until evenly coated.
